WHEN MICHEAL, ONE OF OUR LITTLE GUESTS, AND BIG PIZZA FAN, WAS DIAGNOSED WITH CELIAC DISEASE, WE WERE DETERMINED TO FIND A WAY THAT HE COULD STILL HAVE HIS FAVORITE PIZZA. WE DID OUR RESEARCH TO FIND PIZZA DOUGH THAT WAS FREE OF WHEAT AND GLUTEN. WE FINALLY FOUND ONE, WHICH IS ALSO MADE IN A GLUTEN FREE ENVIRONMENT. THE DOUGH IS THEN STRETCHED USING ONLY WHITE RICE FLOUR. FORTUNATELY, THE SAUCE AND CHEESE THAT WE HAVE ALWAYS USED ARE ALSO GLUTEN FREE. WE HAVE REQUESTED AND RECEIVED VERIFICATION OF THIS FROM OUR SUPLLIERS. THROUGHOUT THIS SEARCH WE FOUND THAT SOME OF OUR OTHER GUESTS WERE DEALING WITH THE DISEASE AS WELL. THEY ALL TOLD US OF THE EXHAUSTIVE PROCESS OF LEARNING WHAT WAS SAFE TO EAT, BECAUSE MANY ADDITIVES IN FOOD ARE WHEAT BASED.
